As I upload portfolio images, there is a large white space under my images. It is from the bottom of my portfolio images to my header and description of the project images being shown. I'm not sure how to get rid of it, or rather to have it adjust to my image sizes.

It's because some images are landscape oriented and some are portrait. Those portrait ones are loading nicely and there's no gap whatsoever.
In order to solve this, I'd recommend cropping landscape pictures to fit portrait size (smaller width and larger height) and you won't have any problems.
Let me know if that helped!

Some of my photos will be really hard to fit a universal size, is there any way to get the page to fit to the height of my images?
Unfortunately, the only option is to use images with equal size and aspect ratio.
